Considering the Escape 17B. Do I need this option to be able to switch back and forth between the bed and dinette configurations? If not, what are the advantages of a permanent bed?

Nevermind, this is covered in the excellent options video https://www.youtube.com/watch?v=tzqaHYCMhpA. It replaces the removable cushions with a regular bed mattress to make the space a permanent bed. With this option it cannot be reconfigured into a dinette.
